Parnsips

Parsnip is an extremely cold-hardy root vegetable that stores very well. It is a good source of fiber, and also provides vitamin B and C, calcium, iron, potassium, and zinc. Parsnip is considered a winter vegetable because its flavor is sweetened and enhanced when roots have been exposed to frosty temperatures.
